Palada Payasam

Ingredients
  • Ada/Rice flakes - ½ cup
  • Milk - 2 cups
  • Water - 1 cup
  • Condensed milk - 200 gm
  • Crushed cardamom - 2
Preparation

1.Boil water in a pan till rolling boil. Switch off flame and soak the washed ada in hot water cover and keep it aside for 20 minutes.  Drain the ada and rinse  under cold water.

2.Combine milk, water and condensed milk together. Add washed ada and stir well.

3.Keep cooking on low flame and stir in between till the ada cooked well and the payasam reached the desired consistency.

4.Heat ghee in a pan and fry the chopped cashews till golden brown, add this to the payasam. Also add crushed cardamom. Serve hot or chilled.

Mango Sorbet

Ingredients
  • Mango pulp - 1 cup
  • Sugar - 1/4 cup
  • Water - 1/4 cup
  • Lemon juice - 1 tbsp
Preparation

1.Slice the mangoes along the sides and scoop out the pulp using a spoon. Scrap the pulp from the seed as well and collect 1 cup of pulp. Place it in a blender, puree it first. 

2.Make a simple sugar syrup by heating sugar and water and just bring to boil to dissolve the sugar completely. Cool down and blend it with the mango pulp, lemon juice. 

3.Transfer to a freezer safe airtight container and freeze it for an hour. Take it out, grind the sorbet in mixer. Repeat the same for 2-3 times. Then freeze it ,scoop and serve. 

Strawberry Mousse

Ingredients
  • Fresh Cream - 1/2 cup
  • Strawberries - 10
  • Sugar - 2 tbsp 
Preparation

1.Take fresh cream in a bowl and whip till soft peaks forms.

2.Chop strawberries roughly and add it to a blender along with sugar and blend it to a puree.

3.Reserve little puree and add the rest to the whipped cream. Whisk it well until the strawberry puree is well blended.

4.In the serving glass add a tbsp of reserved strawberry puree. Then add the mousse till the rim of the glass.Refrigerate it at least for an hour.Serve chilled and garnish with strawberry pieces.

Bread Pudding

This is a simple recipe which is not using any oven/baking.

Ingredients
  • Egg - 2
  • Bread crumbs - 1 cup
  • Vegetable oil - 1 tbsp
  • Sugar  - 1/4 cup
  • Vanilla essence - 1/2 tsp
  • Maida - 1 tbsp
  • Baking powder - 1/2 tsp
  • Salt
Preparation

1. In a bowl mix bread crumbs, maida, salt  and baking powder.

2.In another bowl beat eggs with sugar until it becomes fluffy. Add vanilla essence, dry ingredients in other bowl  and mix well.

3.Add vegetable oil and mix until it combined well.

4.Heat a non stick pan on stove. Add 1 tsp ghee. Pour this batter and cook it for 15 -20 minutes in very low flame.

Mango Kulfi

It is an easy version of kulfi which doesn't requires cooking. As it is the season of mangoes, all of you can try varieties of mango dishes. 

Ingredients
  • Mango - 1
  • Milk - 1 cup
  • Condensed milk - 200gm
  • Cream - 1/2 cup
  • Cardamom powder - 1/2tsp

Preparation

1. Mix chopped mango,condensed milk,milk in a blender till smooth.

2. Add cream and cardamom powder.Blend till the cream is mixed well.

3. Pour he mix in kulfi moulds or small bowls. Cover it properly and keep it in freezer to set.

4. Once set, serve with rose water.

Corn Flakes Laddu


Ingredients
  • Corn Flakes - 1 cup
  • Shredded coconut - 2 table spoon
  • Sugar - 4 tablespoon
  • Cashew nuts - 5
  • Cardamom powder - 1/4 tablespoon
  • Milk/Ghee - 2 tablespoon
Preparation

1.Grind the corn flakes into powder. Crush the nuts and sugar.

2.Heat a pan and add shredded coconut. Then add corn flakes powder, powdered sugar along with cardamom powder.

3.Add Milk/Ghee to this and combine all the ingredients blended well.

4.Roll this into round shape and make small balls.

Chocolate Ladoo


Ingredients
  • Digestive Biscuits - 20
  • Condensed milk - 1/2 cup
  • Cocoa powder - 2 & 1/2 tbsp
  • Nuts (chopped) - 2tbsp
  • Coconut Flakes - As required

Preparation
1.Grind biscuits using grinder. In mixing bowl add powdered biscuits, cocoa powder, chopped nuts and condensed milk.

2.Combine all ingredients well and make a dough. Grease your hand with little ghee,  Pinch small portion and roll it into ball and keep aside.

3.For coating ladoo’s, first dip them in condensed milk. Roll it over dry grated coconut and keep aside.

Banana Coconut Fry / Pazham Varattiyathu

Ingredients
  • Ripe banana - 3
  • Grated coconut - 1/2 cup
  • Sugar - 1 tbsp
  • Ghee - 3 tbsp
  • Cardamom powder - a  pinch
  • Cashew nuts - 2 tbsp
  • Raisins - 1 tbsp
Preparation

1.Cut the bananas into small pieces.

2.Heat ghee in a pan then add raisins, cashew nuts,grated coconut and fry for 3 minutes.

3.Add banana pieces and cardamom powder into it and fry for 5 minutes.

Kulkuls


It is a Goan sweet prepared during Christmas.

Ingredients
  •  All Purpose Flour- 2 cups
  •  Sugar, powdered- 1 cup
  •  Salt- 1/4 teaspoon
  •  Butter, softened- 2 tablespoons
  •  Coconut Milk- 1/2 cup
  •  Baking powder- pinch (optional)
  •  Oil, to deep fry- 2 cups
Preparation

1.In a bowl add the flour, powdered sugar, salt, baking powder together and add the softened butter and rub with the flour and sugar mixture with hands. Then add the  coconut milk and mix well to make a dough.

2.Take a small piece of dough and roll inside the palm to make it a smooth ball. Keep the dough ball on to the backside of the fork and gently spread the dough from one end to other almost like a rectangle.

3.Then roll the dough from back side of the fork to the tip of the fork gently with out losing the impressions of the fork. The ends should join while rolling otherwise it will open once you fry them. Keep the rolled curls on a plate. Like wise do for the rest of the dough.

4.Heat oil in a pan and drop the curls one by one  and deep fry them on medium flame till golden brown color.

Rice Laddu / Ari Unda

An easy dessert with less number of ingredients. We can store it for few days also.

Ingredients
  • Matta Rice - 1 cup
  • Jaggery - 75gm(grated)
  • Coconut - 1/2 cup
Preparation

1.Heat a pan and roast the rice till the rice cracks.

2.Grind the roasted rice to fine powder.

3.Add grated coconut and jaggery into this.

4.Make small balls out of it.

Coconut Ladoo



Ingredients
  • Condensed milk - 1/2 tin 
  • Desiccated coconut - 1 cup + 1/2 cup for rolling 
  • Milk powder -  2 tblsp 
Preparation

1.In a non stick pan, add condensed milk, grated coconut and milk powder.

2.Heat over medium flame and stir until the mixture turns non sticky and becomes a mass.

3.Switch off the flame and let it become warm. In a plate place the remaining grated coconut.

4.Grease your hands with ghee. Make equal sized balls out of the mixture and roll these ladoos over the grated coconut. 

Bread Halwa


Ingredients
  • Bread - 6 slices
  • Milk - 1 cup
  • Sugar - 1/2 cup
  • Ghee - 1/4 cup
  • Cardamom powder - 1/4tsp
  • Cashew/Raisin/Almonds - a few
Preparation

1.Cut the bread slices into small pieces.

2.Heat ghee in a pan and fry cashew & raisins. Keep it aside. Then saute bread pieces in ghee.

3.Add milk and sugar. When bread pieces stick together add cardamom powder, cashew and raisins.

4.When it reaches the consistency( it will become non-sticky and it starts leaving the sides) switch off the flame.

5.Grease the plate with little ghee and spread the halwa into it.

Banana Rolls

Banana Rolls



Ingredients 
  •  Ripe banana - 2
  •  Sugar - 2 tbsp
  •  Cardamom - 3 or 4(powdered)
  •  Grated coconut - 1/2 cup
  •  Ghee
  •  Nuts
Preparation

 1.Slice the banana into 3 pieces lengthwise.

 2.Heat ghee in a pan and shallow fry both sides of banana slices and keep it aside.

 3.In the same pan add some ghee and saute coconut, nuts, cardamom and sugar.

 4.Roll the slices and fill the coconut mix and fix it with a tooth pick.

Milk Fudge/ Pal Peda



















Ingredients
  • Milk Powder: 3/4 cups
  • Condensed milk: 200gm
  • Butter: 4 tbsp
  • Cardamom: 2 (peel and crush the seeds)
  • Almonds/Pista/Cashew/Raisins - a few
Preparation

1.Melt the butter in a heavy bottomed vessel.

2.Add the condensed milk and milk powder and mix well. Cook on low to medium flame, stirring constantly, till it becomes a thick paste.Add cardamom powder and mix well.

3.Turn off heat and allow to cool.Lightly grease your fingers and palm, shape the milk powder mixture into small balls and flatten them slightly.

4.Decorate  with any nuts of your choice.Store its in an air tight container. Cool it and serve.

Chocolate Biscuit Pudding

Ingredients   
  • Tea biscuits - 15
  • Unsalted Butter - 50gms
  • Sugar - 1/2 cup
  • Cocoa powder - 2 tbsp
  • Vanilla extract - 1/2 tsp
Preparation  

1. Add 1 tsp coffee powder  in 1 cup of boiling water. Filter it and leave it to cool.

2. Line a square tin with cling film leaving a little extra on one side to fold over the top.

3.In a bowl, beat together butter and powdered sugar until fluffy. Add cocoa powder and continue beating until well mixed.

4.Add vanilla essence and mix well. Add milk little at a time and mix well. The consistency of the mixture should neither be stiff nor too watery.

5.Now dip the biscuit one at a time in coffee decoction and arrange it in the pan as a layer.
With a spatula, spread the cocoa mixture over the biscuits evenly. Continue layering biscuits and cream alternatively

6.Decorate it with chopped nuts or  sprinkles, cover it that extra cling film, press it gently and keep it in the freezer to set. When ready, lift the pudding out of the pan, unfold it and slice it into small pieces and serve..


Rava Munthirikoth


It is a Kerala sweet made with Semolina

Semolina / Rava - 1 cup
Sugar - 1/2 cup
Grated Coconut - 1/2 cup
Maida - 1 cup
Cardamom - 2 tsp
Raisins - few

1. Fry the semolina without changing the colour then mix the fried rava, sugar, grated coconut and cardamom powder well.
2. Make small balls out of that mixture (Moist with milk if needed) and place one raisin on each ball.
3. Mix the maida with salt and water (Mix should not be watery)
4. Dip the balls in the flour mix and deep fry in oil.

Rusk Laddu


Rusk slices - 7
Sugar - 1/4 cup
Coconut grated- 1/2 cup
Cardamom powder - a pinch
Cashew nuts - 10
Ghee - 1 1/2tbspn

1.Grind the rusk in the mixie, and also grind the sugar
2.Mix both and add grated coconut,pinch of cardamom, and grated cashew nuts and mix well
3.Heat the ghee and pour it on the mixture and make Laddu .

Milk Halwa


Milk - 2cup
Semolina/Rava - 1/4 cup
Sugar - 1/2 cup
Ghee - 1/2 cup

1.Mix all ingredients together
2.Place it in a pan and stir it continuously in medium flame.
3.When halwa consistency is reached remove from fire.
4.Garnish with fried cashews or raisins

Stuffed Banana / Pazham Nirachathu

Ingredients
  • Ripe Plaintain - 3  
  • Grated coconut - 3tbsp
  • Sugar - 1tbsp
  • Cardamom powder - 2 pinch
  • Maida - 2 tbsp
  • Raisins/Cashew 
Preparation

1.In a pan heat ghee then add grated coconut saute for few minutes in a medium flame. Add sugar in to it,saute well. Then fry cashews and raisins in it.Add cardamom powder. Mix well and switch off the stove.

2.In a bowl add maida, salt and water.mix well and make a thick batter and keep aside.

3.Peel banana and make a shallow slit lengthwise, from one end to another,depth should be made until center.

4.Fill coconut filling in to the slit, push the stuff inside the banana as much as you can and cover the slit with maida batter.

5.Heat oil in a pan and place the banana with slit should be down.after few minutes turn all sides and fry till banana becomes golden color.


Boondi Ladoo

Bengal Gram Flour - 1 cup
Cooking Soda - a pinch
Sugar - 1/2 cup  
Water - 1/2 cup
Raisins - 1 tbsp
Cloves - 4
Cardamom powder - A pinch
Ghee - 1 tsp

1.Mix the besan with water to make a batter of medium thick consistency. Add the cooking soda to this.
2.Fry the raisins and cloves in a tsp of ghee and keep it aside.
3.For making the sugar syrup, mix the sugar with the given amount of water in a heavy bottomed vessel. Heat till the sugar gets dissolved stirring in between.
4.Once sugar gets dissolved stop stirring and boil till this reach one string consistency.
5.Switch off the flame at this stage and heat the oil in a heavy bottomed pan to fry boondis.
6.Pour a ladle of batter to the perforated ladle ,keeping the ladle on the top of the oil and let the boondis falls into the oil.
7.When it is half fried take it out from the oil and transfer it to the sugar syrup.
8.Repeat the process for the the remaining batter. While repeating , wipe out the excess batter from the top and back of the ladle used for making boondi.
9.Add the fried raisins, cloves and cardamom powder to the boondi sugar mixture. Mix it well.
10.When it is luke warm make balls of desired shapes and store this in a airtight container.
