Irachi Ada / Beef Ada

A yummy Malabar snack and an Iftar dish too. Any meat can be used for this.

Ingredients
  • Egg - 1
  • Chilly powder - 1/4 tsp 
  • Milk - 1 tbsp
For Dough
  • Wheat flour - 3/4 cup
  • Maida - 1/4 cup
  • Oil - 1tbsp
  • Water
  • Salt
For Filling
  • Beef - 250 gm
  • Turmeric powder - 1/4 tsp
  • Chilly powder - 1/2 tsp
  • Coriander powder - 1/2 tsp
  • Ginger,Garlic - 1tsp each,crushed
  • Green chilly - 2
  • Onion - 2
  • Pepper powder - 1/4 tsp
  • Garam Masala - 1/4 tsp
  • Curry leaves - 1 tbsp,chopped
Preparation

1.Cook beef with turmeric, coriander, chilly powder and salt. Shred the cooked beef.

2.Heat oil in a pan, add crushed ginger, garlic and green chilly. Saute it well, then add onion and salt.Fry onion till transparent. Add shredded beef into this.

3.Add garam masala, pepper powder and chopped curry leaves. Mix well and switch off

4.Take wheat flour, maida, salt and oil in a bowl and mix well. Add water little by little and make a dough out of it. Keep it aside for 20 minutes.

5.Divide the dough into small balls and roll into thin circles. Place 1 tbsp of filling in the center, fold it into a semi circle and seal the edges by pressing with a fork.

6. Beat an egg and add chilly powder, salt and milk. Mix it well. Dip the ada in egg batter and deep fry it in oil till golden brown.

Keema Masala Dry

Ingredients
  • Minced meat – 500 gm
  • Small onion – 5
  • Green Chilli  – 2
  • Ginger  garlic paste – 2 tsp
  • Red chilli powder – 1 tsp
  • Pepper powder – 1 tsp
  • Turmeric powder – ½  tsp
  • Coriander powder – 4 tsp
  • Garam masala – 1 tsp
To Marinate
  • Chilli powder – 1 tsp
  • Coriander powder – 2 tsp
  • Turmeric powder – ½ tsp
  • Lemon Juice – 1 tsp
Preparation

1. Mix all ingredients to marinate. Add little water and make it into a good paste. Add minced meat and mix well.

2. Pressure cook marinated meat till its cooked well. Open the cooker and cook for some time to make it dry.

3.Heat oil in a pan and splutter mustard seeds. Add sliced small onion and curry leaves. When onion becomes soft add ginger garlic paste, green chilly and cook for 2-3 min.

4. Add chilly, turmeric, coriander, pepper powder and garam masala and mix well. Add cooked meat and mix well

5.Cook in medium flame till meat is completely dry and becomes dark brown in colour. 

Keema Matar

Ingredients
  • Minced meat (beef/mutton) – 1/2 kg 
  • Fresh / frozen green peas  – 1/2 cup
  • Cumin seeds – 1/4 tsp
  • Cardamom – 3, cloves – 4, cinnamon stick – 1/2 inch stick, bay leaf – 1
  • Onion – 1 
  • Green chilly – 1
  • Ginger-garlic paste – 1 tbsp
  • Turmeric powder – 1/2 tsp
  • Chilly powder – 3/4 tsp
  • Coriander powder – 2 tsp
  • Garam masala powder – 2 tsp
  • Tomato – 2 
  • Yoghurt – 2 tbsp
Preparation

1.Heat 2 oil in a pan, add cumin seeds and whole spices. Stir for a few seconds and add finely chopped onions, salt, green chilly and curry leaves.

2.When onion starts changing color, add ginger-garlic paste and saute. Add turmeric, chilly, coriander, garam masala powders and saute until their raw smell disappears.

3.Add finely chopped tomato and saute until it gets mushy and oil starts separating. Add minced meat, enough salt and mix well. Saute for 5 minutes and add yoghurt. Add 1/2 cup of hot water, mix well and cook.

4.Add fresh/frozen green peas. Cook at medium-low heat till peas get cooked. Sprinkle garam masala powder and mix well. Switch off. Garnish with cilantro.

Beef Chinese Potato Stir Fry / Beef Koorkka Ularthiyathu

Ingredients
  • Beef - 1/2 kg
  • Chinese potato - 200 gm
  • Ginger crushed - 1 tbsp
  • Garlic crushed - 1 tbsp
  • Onion - 2
  • Green chilly - 3
  • Pepper powder - 1/2 tsp
  • Chilly powder - 1 tsp
  • Coriander powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Garam masala - 1/2 tsp
  • Fennel powder - 1/2 tsp
Preparation

1.Clean and cook chinese potato with enough salt and water. Cook beef with turmeric and salt.

2.Heat oil in a pan add (cocconut bits)2 tbsp shallots,curry leaves fry it remove.

3.In the same pan add ginger,garlic,onion,green chilly, salt and saute. Add pepper, fennel, red chilly, garam masala, coriander, turmeric powder and saute till raw smell goes.

4.Add cooked beef into this and mix with masala. Add 1/4 cup of water,let it boil.Add cooked chinese potato. When the gravy thickens,add fried shallots,curryleaf and switch off.

Beef Vindaloo

Ingredients
  • Beef – 1 kg 
  • Onions – 3, chopped
  • Tomatoes – 2, chopped
To grind
  • Chilly powder – 1.5 tbsp
  • Kashmiri chilly powder – 2.5 tbsp
  • Pepper powder – 1 tsp
  • Garam masala – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Mustard seeds – 2 tsp
  • Fenugreek seeds – 1/4 tsp
  • Cumin seeds – 1/2 tsp
  • Ginger-garlic paste – 2 tbsp
  • Sugar – 2 tsp
  • Vinegar – 2 tbsp
Preparation

1.Grind the ingredients to a fine paste. Add this paste to the beef pieces. Add salt and mix well. Keep aside for 1 hour.

2.Heat oil in a pressure cooker and fry the onions till light brown in color. Add tomatoes and fry till oil separates.

3.Add the marinated beef and fry for a minute. Add 1/2 cup of water and mix well. Cover and cook on a low flame till done.

4.Once it is cool, open the lid and simmer for 5 minutes, till the gravy is thick.

Meat Stir Fry / Irachi Thoran


You can use any meat and proceed the same way. Here I have used beef. This can be used as an item for lunch box.

Ingredients
  • Cooked and Shredded Beef - 1/2 kg
  • Dry Red Chilly - 2
  • Shallots sliced- 2 big
  • Ginger- 1 small piece (chopped)
  • Curry Leaves - 1 Sprig
  • Garam Masala Powder - 1/2 Teaspoon
  • Black Pepper Powder - 1/4 Teaspoon
To grind
  • Grated Coconut - 1/4 cup
  • Shallots- 2
  • Green Chilly -1 big
  • Garlic- 1 big
  • Turmeric Powder - 1/2 Teaspoon
  • Salt
Preparation

1.Grind all the ingredients  slightly and keep aside.

2.Heat Oil in a pan on medium heat and splutter the mustard seeds.

3.Add Dry Red Chilly, Shallots, Ginger and Curry Leaves and saute till golden brown.

4.Add the minced Meat and saute for a minute. Put the Coconut mixture in the middle and cover it with the meat.

5.Cover the pan, lower the heat and cook it for 3-5 minutes.

6.Open the pan and mix everything; add Garam Masala Powder and Pepper Powder. Mix everything together and saute for a minute  and switch off the heat.

Beef Roast / Ularthiyathu

Ingredients
  • Beef - 1kg
  • Ginger-garlic paste - 2 tbsp
  • Kashmiri red chilly powder - 1 tsp
  • Vinegar - 1 tbsp
  • Garam masala - 1½ tsp
  • Salt- to taste
  • Water- ¼ cup
For Stir Frying
  • Coconut oil - 4 tbsp
  • Ginger, chopped - 2 inch
  • Garlic, chopped - 4
  • Curry leaves - 1 sprig
  • Green chilly - 4, halved
  • Small onions - 10
  • Pepper powder - ½ tsp
Preparation

1)Combine the beef with the ingredients in the first section. Cook the beef in a pressure cooker over medium heat till cooked well.

2)Place a non-stick pan over medium heat, add coconut oil. Add mustard seeds, let it splutter.

3)Add the chopped ginger and garlic to the oil, saute till it turns light golden in color. Add curry leaves and green chilly, saute in the oil for a couple of minutes.

4)Add small onion, a few pinches of salt and saute till onions turn golden brown in color.Add the cooked beef along with any water in it, stir fry till the water has dried off and beef turns light browned.

5)Add ground pepper and more salt if needed.

Beef Curry Thattukada Style

Ingredients 
  • Beef- 1/2 Kg
  • Onion -2 
  • Ginger,finely chopped- 1 tsp
  • Green chilies - 2
  • Curry leaves-3 sprigs
  • Water-1 cup
To grind
  • Ginger,chopped-1 tbsp
  • Garlic,chopped-1 tbsp
  • Kashmiri chili powder- 1 tbsp
  • Turmeric powder- 1/4 tsp
  • Coriander powder- 1 tbsp
  • Fennel seeds- 1/2 tsp
  • Cinnamon - 1" piece
  • Cloves-2 nos
  • Cardamom-2 nos
  • Star anise- 1 small
  • Whole black pepper- 1/2 tsp
Preparation

1.Combine all the ingredients to grind in a blender. Grind it to a paste.

2.Heat oil in pan/pressure cooker. Add sliced onion, ginger, green chilies and curry leaves. Saute until onion turns translucent.

3.Now add the ground masala and fry until oil starts to separate. Add beef and mix well.

4.Add water and salt to taste, cover and cook until beef is done. Uncover and cook until gravy turns thick.

Beef Puttu

Ingredients 
  • Beef - 1 cup (minced)
  • Onion - 1/2 cup
  • Ginger - 1/2 tbsp
  • Garlic - 1/2 tbsp
  • Tomato - 1/2 cup
  • Green chilly - 4
  • Curry leaves - 1 sprig (chopped)
  • Coriander Powder - 1/2 tbsp
  • Turmeric powder - 1/4 tsp
  • Garam masala - 1/2 tbsp
  • Pepper powder - 1/2 tbsp
  • Fennel seeds - 1/4 tsp(crushed)
Preparation

1.Heat oil in pan and saute onion till brown. Add minced ginger,garlic,green chilly,curry leaves and cook till soft.

2.Add all powders and fennel and mix well till spices coated with ingredients. Add tomato and cook till soft.

3.Add minced beef and salt and cook for 15 minutes. Once it is done let it cool down.


 Refer Puttu to know how to make Puttu.

4.In the puttu maker layer coconut,rice flour,beef masala again rice flour and coconut in this order.Steam it for 6-8 minutes in medium heat and remove.

Tapioca Beef Biriyani


Tapioca - 1 kg
Coconut - 1/2 cup
Green chilly - 6
Ginger - 1 piece
Beef with bones - 1 kg
Coriander powder - 4 tsp
Chilly powder - 4 tsp
Turmeric powder - 1 tsp
Meat Masala - 2 tsp
Onion - 4
Garlic - 10 flakes
Shallots - 8
Pepper - 1 tsp
Garam Masala - 1 tsp

1.Add salt,2tsp chilly,2tsp coriander,1/2 tsp pepper,1/2 tsp turmeric into beef pieces and keep it aside for half an hour.
2.Saute onion,garlic,curry leaf,ginger,meat masala,red chilly,coriander and garam masala in coconut oil.Add beef into this and pressure cook in medium heat.
3.Boil tapioca with salt and strain the water.
4.Grind green chilli,turmeric,shallots and coconut.Add this into tapioca and mix well.
5.Heat oil in a pan and add mustartd and curry leaf.pour this over tapioca mix.
6.Mix cooked beef along with tapioca.

Beef Fry

Ingredients
  • Beef – ½ kg
  • Onion – 1 big, sliced finely
  • Small onion – ½ – ¾ cup, sliced
  • Chili powder – ½ tbsp
  • Coriander powder – 1tbsp
  • Turmeric powder – ½ tsp
  • Ginger & garlic – ½ – 1 tbsp, crushed
  • Vinegar – 2 tsp
  • Aniseeds/fennel – ½ – 1 tsp
  • Cinnamon – 1 inch piece
  • Cloves – 4-5
  • Star anise – 2
  • Garam Masala – ½ – 1 tsp
Preparation

1.Powder aniseed, cinnamon, cloves and star anise and keep aside. 


2.Combine the powdered spices, ginger garlic, small onion, chilli, coriander and turmeric powder, vinegar, salt, curry leaves & beef. Make sure that beef is marinated well with the spices.

3.Pressure cook the marinated beef till it is done.if you want you can add 2-3 tbsp of water. If there is any water left, after pressure cooking, cook till the water is dried.

4.Heat oil in a pan and saute the onions, till it becomes golden brown. 


5.Add the cooked beef & curry leaves. If you want you can sprinkle garam masala at this stage. Mix well. Stir over a low flame, till it is roasted well.

Beef Cutlet

Ingredients 
  • Beef - 1 Kg
  • Onion - 3 
  • Ginger - 1 small piece
  • Green Chilly - 5
  • Potato - 3 ( boiled and smashed)
  • Turmeric powder - 1/4 tsp
  • Garam masala Powder - 1  tbsp
  • Pepper powder - 1 tbsp
  • Egg - 1 
  • Curry leaves - 2 sprigs
  • Bread crumbs - As required.
  • Salt - to taste
Preparation

1.Pressure cook the cleaned beef with salt. Once it is cooled, mince the beef using a chopper or in a mixer.


2.Heat oil in a pan  and sauté chopped onion until it becomes translucent, then add chopped ginger, green chillies and curry leaves.


3.Then add garam masala, salt, pepper powder, turmeric powder and sauté for few seconds. Add minced beef and saute for 3 minutes.


4.Then add mashed potato and stir well. Take off the pan from the fire and allow the mixture to cool.


5.Then knead the mixture softly and make balls and roll it in a required shape and dip it in beaten egg white and roll it in bread crumbs.


6.Shallow fry it in a hot pan till it gets brown in color (both sides). Serve hot with ketchup or salad.

Beef Masala

Ingredients
  • Beef – 500g 
  • Onion – 2
  • Fennel seeds – ½ tsp
  • Tomato – 1
  • Green Chilli  – 2
  • Ginger  garlic paste – 3 tsp
  • Red chilli powder – 1 tsp
  • Pepper powder – 1 tsp
  • Turmeric powder – ½  tsp
  • Coriander powder – 4 tsp
  • Garam masala – 1 tsp
To Marinate
  • Chilli powder – 1 tsp
  • Coriander powder – 2 tsp
  • Turmeric powder – ½ tsp
  • Ginger garlic paste – 2 tsp
  • Salt
Preparation

1.Mix all ingredients to marinate. Add little water and make it into a good paste.Add cut beef pieces and mix well. Pressure cook marinated beef till beef is cooked well.

2.Heat oil in a pan and fennel seeds, sliced onion and curry leaves.Cook with pan covered, stirring in between till onion becomes brown.

3.Add tomato and saute till it becomes soft.Add ginger garlic paste, green chilli and saute for a min or two.

4.Add all the masala, salt and saute for a min.Add cooked beef and mix well. Cook with the pan covered in medium flame till beef becomes brown. 

Nadan Beef Curry


Ingredients
  • Beef – 1kg
  • Onion – 2
  • Shallots – 1/2 cup
  • Garlic – 10 flakes
  • Green chilli – 4
  • Ginger – 1 piece
  • Red chilli – 2tbsp
  • Coriander – 4tbsp
  • Turmeric – 12 tsp
  • Meat masala – 1tbsp
  • Pepper – 1tsp
  • Curry Leaf - 2 sprig
Preparation

1. Cook the beef in a pressure cooker adding turmeric powder, pepper powder, salt and 1/2 cup of water.

2.Heat oil in a pan and add curry leaves, ginger, garlic, green chilli, shallots, onion and saute well.

3.Add coriander, red chilly, pepper powder and some hot water. (First heat  all the masala powder and add)


4.Add cooked beef and mix well. Cover it and cook for some time.

5.Add meat masala and turn off.
