Broccoli Egg Stir Fry

Ingredients
  • Broccoli - 1
  • Onion - 1
  • Egg - 2
  • Coconut - 1/2 cup
  • Green chilly - 2
  • Garam masala - a pinch
  • Turmeric powder - 1/4 tsp
  • Pepper powder - 1/4 tsp
Preparation

1.Wash and clean the broccoli and cut the florets and chop it finely.

2.Heat oil in a pan and splutter mustard and add onion and green chilly.

3.Add coconut,turmeric powder, salt and mix well. Add beaten egg and saute it well with coconut.

4.Add chopped broccoli, curry leaf and pepper powder.Mix it well,cover and cook. Finally add garam masala and switch off.

Ridge Gourd / Peechinga Thoran

Ingredients
  • Ridge gourd - 2
  • Onion - 1
  • Green Chilly - 3
  • Garlic -1
  • Coconut - 1/2 cup
  • Chili powder - 1 tsp
  • Turmeric powder - 1/2 tsp
Preparation

1.Clear the ridges, scrape it gently,wash and cut into slices.

2.Heat oil in a pan and splutter mustard, saute onion,garlic and green chilly.

3.Add crushed chilly/chilly flakes,turmeric,chilly powder and saute.

4.Add grated coconut and mix well.Add sliced vegetable and salt.Cover and cook in low flame. Mix well in between.

5.Once it is cooked,uncover and cook for some time to make it dry. 

Onion Stir Fry / Ulli Thoran

Ingredients
  • Shallots - 15 / Onion - 2
  • Grated coconut - 1/2 cup
  • Turmeric powder - 1/4 tsp
  • Red chilly powder - 3/4 tsp
  • Urad dal - 1/2 tsp
  • Dry Red Chilly - 1
Preparation

1.In a bowl, mix coconut, chilly and turmeric powder and keep aside.

2.Heat oil in a pan. Add mustard seeds, when they start splutter add urad dal, Dry red chilly, curry leaves and saute on a low heat  until dal turn light brown.

3.Add sliced onion and fry till pink color on a low heat. Add grated coconut mix and salt. Mix all the ingredients.

4.Cover with a tight lid and cook on a medium to low heat until done and water dries up. Open the lid and stir well.

Breadfruit / Kadachakka Thoran

Ingredients
  • Breadfruit – 1.5 cups (cubed)
  • Onion – 1 
  • Grated coconut – 1/2 cup
  • Turmeric powder – 1/2 tsp
  • Chilly powder – 1 tsp
  • Coriander powder – 3/4 tsp
  • Garam masala powder  – 1 tsp
  • Dry red chilies – 2, broken
  • Curry leaves – 1 sprig
Preparation

1. Combine the grated coconut with turmeric powder, chilly powder, coriander powder and garam masala powder.

2. Heat oil in a pan. Splutter mustard seeds and fry dry red chilies and curry leaves. 

3.Add the breadfruit and onion along with the grated coconut mixture. Add enough water and salt. Cook covered at low heat until done. Once its done, open the lid and stir-fry until dry. 

Green Peas Sir Fry/Thoran

Ingredients
  • Fresh Green Peas – 1 cup
  • Grated Coconut – 1/2 cup
  • Cumin Seeds – 1/4 tsp
  • Green chilly – 1 
  • Chilly Powder –  1/2 tsp
  • Turmeric powder – 1/4 tsp
  • Curry Leaves – 1 sprig
  • Dry Red Chilly – 2
  • Shallots/small onion –  4
Preparation

1.Remove peas from its shell and clean them properly. Add these peas in boiling water along with salt.Cook till done and strain the water.

2.Grind coconut, green chilly, 2 shallots, 1/2 sprig of curry leaves, cumin seeds, turmeric powder, chilly powder and salt along with little water .

3.Heat oil in a kadai and splutter dry red chilly and curry leaves. Now add 2 sliced small onion and saute. Then add the coconut mix to this and saute for 5 minutes in low flame .

4.Finally add cooked green peas to this and mix well with the coconut.Stir for another five minutes in low flame.Check the salt .

Meat Stir Fry / Irachi Thoran


You can use any meat and proceed the same way. Here I have used beef. This can be used as an item for lunch box.

Ingredients
  • Cooked and Shredded Beef - 1/2 kg
  • Dry Red Chilly - 2
  • Shallots sliced- 2 big
  • Ginger- 1 small piece (chopped)
  • Curry Leaves - 1 Sprig
  • Garam Masala Powder - 1/2 Teaspoon
  • Black Pepper Powder - 1/4 Teaspoon
To grind
  • Grated Coconut - 1/4 cup
  • Shallots- 2
  • Green Chilly -1 big
  • Garlic- 1 big
  • Turmeric Powder - 1/2 Teaspoon
  • Salt
Preparation

1.Grind all the ingredients  slightly and keep aside.

2.Heat Oil in a pan on medium heat and splutter the mustard seeds.

3.Add Dry Red Chilly, Shallots, Ginger and Curry Leaves and saute till golden brown.

4.Add the minced Meat and saute for a minute. Put the Coconut mixture in the middle and cover it with the meat.

5.Cover the pan, lower the heat and cook it for 3-5 minutes.

6.Open the pan and mix everything; add Garam Masala Powder and Pepper Powder. Mix everything together and saute for a minute  and switch off the heat.

Capsicum Carrot Stir Fry/Thoran

Ingredients
  • Carrot chopped  - 1 
  • Capsicum chopped - 2
  • Turmeric powder - 1/4 tsp
  • Pearl onion chopped - 2 tbsp
  • Green chilli chopped - 2 nos
  • Ginger chopped  - 1/2 tsp
  • Garlic chopped  - 2 cloves
  • Grated coconut  - 4 tbsp
  • Mustard seeds  - 1/2 tsp
  • Urid dal       - 1/2 tsp
Preparation

1.Heat oil in a kadai. Splutter mustard seeds and add urid dal.

2.Saute ginger, garlic, pearl onion and green chillies. When onion turns to light brown, add turmeric powder.

3.Add chopped carrot, capsicum and salt. Saute well. Then add grated coconut and curry leaves.

4.Cook this in an open pan as it cooks fast. Take care not to overcook. 

Mushroom / Koon Thoran

Ingredients 
  • Mushroom – 250gm
  • Onion – 1 / Shallots - 15
  • Grated coconut –  1/2 cup
  • Green chilies – 2, slit
  • Ginger – 1/2 inch, chopped
  • Garlic – 2, chopped
  • Turmeric powder – 1/4 tsp
  • Chilly powder – 1/2 tsp
  • Coriander powder – 1/2 tsp
  • Pepper powder – 1/4 tsp
  • Garam masala powder – 1/2 tsp
  • Curry leaves – 1 sprig
  • Dry red chilies – 2
Preparation

1. Put the mushrooms in water and 1/2 tsp turmeric powder for about 10 minutes. Wash the mushroom well in 2-3 rounds of water. Chop them to small pieces.

2. Heat oil in a pan at medium heat. Splutter mustards and fry dry red chilies. Add the sliced  onions. Stir fry until they are lightly browned.

3.Bring down the heat and add the chopped mushroom pieces, ginger, garlic, green chilly, spice powders, grated coconut, salt and curry leaves.

4.Stir fry at medium heat until mushroom is done and water oozed out is completely evaporated. Mushroom will get cooked fast. Switch off.

Bitter Gourd / Pavakka Thoran


Ingredients 
  • Bitter gourd  - 1 big
  • Ginger - small piece
  • Coconut - 1/2 cup
  • Shallots - 5 
  • Green chilly - 3
  • Curry leaves
  • Salt
Preparation

1. Finely chop the bitter gourd.

2. Add grated coconut, sliced shallots, curry leaves, green chilly and chopped ginger into it.

3. Heat oil in a pan and splutter mustards.  Add the bitter gourd and salt into this.

4. Cook it in low flame.

Banana / Vazhakka Thoran

Ingredients 
  • Raw banana/ Green plantains - 4
  • Grated coconut - 1/2 cup
  • Crushed garlic - 3 cloves
  • Chopped green chiles - 2 nos
  • Shallots - 5
  • Turmeric powder - 1/4 tsp
  • Cumin seeds -- 1/2 tsp
Preparation 
1.Peel and chop the raw banana into small pieces. Cook it covered by adding a cup water and salt , till it is done.
2.Grind grated coconut, Turmeric powder, green chillies and crushed garlic and 3 shallots to a coarse paste.
3.Heat oil in a pan and add mustard seeds. When the pop up add cumin seeds and curry leaves and chopped shallots and fry it for a minute.
4.Add cooked raw plantains and combine it with the coconut mix. saute for 5 minutes, stirring occasionally.

Spinach / Cheera Thoran


Ingredients
  • Cheera/Spinach chopped fine – 2 cups
  • Grated coconut – 1/2 cup
  • Shallots chopped – 5
  • Green chillies chopped – 4
  • Garlic chopped – 1/2 tsp
  • Jeera – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Mustard seeds – 1 tsp
  • Curry leaves – a sprig
  • Salt – to taste
  • Oil – as needed
Preparation


1.Grind grated coconut, turmeric powder, green chillies, jeera seeds and garlic into a coarse paste and keep aside.

2.Heat oil in a pan and add mustard seeds into it.Allow it to splutter,then add curry leaves,shallots stir and add the chopped spinach.Stir for few minutes and mix in the ground paste.

3.Add salt,stir and cook until all the water evaporates and thoran becomes dry.Serve with rice.

Banana Bud /Vazhakoombu Thoran

Ingredients
  • Banana Bud/Vazha kooombu – 1, medium
  • Coconut oil - 1 tbsp
  • Turmeric Powder - 1/4 tsp
  • Green Gram/cheru payar Cooked – 1/2 cup
  • Curry leaves – 2 sprigs
  • Mustard – 1/2 tsp
  • Dry red chillies – 2
To grind
  • Coconut, grated- 1/2 cup
  • Cumin Seeds- 1/2 teaspoon
  • Garlic- 2 cloves
  • Red chilli powder- 1 teaspoon
Preparation

1.Remove 3-4 outer layers of the banana bud and chop it really fine into a vessel with water, salt, oil and turmeric powder. 


2.In a deep pan, heat some oil and splutter the mustard. Add dry red chillies and brown them. Now add in the finely chopped banana bud(after squeezing out the water) and cook covered, at low heat.


3.Grind the grated coconut with cumin seeds,red chilly powder and garlic.


4. When the banana bud is cooked well, add the cooked green gram, coconut mixture , curry leaves and mix well. Check for salt. Cover and cook for a few minutes. Switch off

Cauliflower Egg Stir fry

Ingredients 
  • Cauliflower (chopped) - 1 cup
  • Onion(finely chopped) - 1
  • Green Chilly - 3
  • Turmeric powder - ¼ tsp
  • Grated Coconut - ¼ cup
  • Mustard seeds - ½ tsp
  • Red Chilly - 2
  • Egg - 2
  • Salt – to taste
  • Oil - 2 tsp
  • Curry leaves- few
Preparation
1.Cook Cauliflower in little water, turmeric powder and salt.

2.Beat the eggs and keep aside.

3.Heat Oil in a pan and allow mustard seeds and red chilly to splutter.

4.Add Chopped Onion and Green Chilly and saute well.

5.When Onion turns transparent, add the beaten egg, grated Coconut and salt and stir continuously.

6.Add Cooked Cauliflower along with Curry leaves and saute well.

7.When it becomes dry, remove from fire.

Cabbage Stir Fry / Thoran


Ingredients

  • Shredded Cabbage – Half of one medium sized cabbage
  • Sliced Shallots – 1/2 cup
  • Grated Coconut – 1 Cup
  • Finely chopped Garlic – 4 cloves
  • Cumin – 1/4 tsp
  • Slit Green Chillies – 3 
  • Turmeric – A pinch
  • Oil – 2 tbsp
  • Mustard Seeds – 1/2 tsp
  • Curry Leaves – A sprig

Preparation

 1.Mix together coconut, turmeric powder, shallots and green chillies using hands or you can coarsely grind everything together.Combine the cabbage with some salt.


2.Heat 2 tbsp oil in a non stick pan and splutter mustard seeds. Add curry leaves and saute for a minute.


3.Add the shredded cabbage and saute for 2 minutes. Next add the coconut mixture and combine everything together.


4.Cover the pan and cook on low flame, stirring occasionally. Do not add water while cooking cabbage.


5.After 6- 8 mins, the cabbage will be cooked. Remove the lid and stir fry for another 4-5 minutes so that the cabbage is crunchy and not soggy.

Cherupayar / Green gram Thoran

Ingredients 
  • Green gram - 1 cup
  • Coconut - 1/2 cup
  • Green chilly - 2
  • Turmeric powder - 1/4 tsp
  • Small Onion - 4
  • Garlic -  2 cloves
Preparation

1.Pressure cook green gram with salt.

2.Grind coconut with green chilly,turmeric powder,cumin seeds,small onion,garlic and curry leaves.

3.Heat oil in a pan. Splutter mustard,add curry leaves and red chilly.

4.Add cooked green gram and coconut mixture.Mix well

Pappadam Thoran

Ingredients
  • Papad - 10
  • Coconut  - 1 cup
  • Green chillies - 4
  • Red chillies - 2
  • Small onions - 4 
  • Coconut oil - 2 tbsp
  • Mustard seeds - ½ tsp
  • Curry leaves
  • Salt
Preparation

1.Pound the grated coconut with the green chillies, curry leaves and small onions in a mixer bowl. 

2.Fry the papad lightly  and then crush them. 

3.Heat oil in a pan and splutter the mustard seeds and then sauté the dry red chillies, chopped small onions and curry leaves. 

4.Add the coconut mixture then crushed papad and mix well. Lower the flame and cook for 5 minutes.

Omakka Cherupayar / Papaya Mung Beans Thoran

Ingredients 
  • Mung bean-1 cup (boiled)
  • Raw Papaya -1 chopped
  • Grated Coconut-1 cup
  • Green Chillies-2
  • Garlic-1 pod
  • Turmeric Powder-1/4t
  • Mustard Seeds-1/4t
  • Curry Leaves- a sprig
  • Shallots-5 sliced thinly
  • Red chilli - 1
 Preparation

1.Grind coconut, green chillies, garlic and turmeric powder to a coarse paste.

2. Heat coconut oil. Add the mustard seeds and allow it to splutter. Add the sliced shallots,Red chilli and fry until they soften. The coarse paste follows this.

3. Add the chopped papaya. Add 1/4 cup of water and cover and allow the papaya to cook.

4.Add in the boiled mung beans and stir the mixture and cover and cook until all
the moisture content evaporates.

5.Finally do a salt check and sprinkle curry leaves and serve.

Scrambled Egg & Spring Onion


Ingredients 
  • Spring onion - 1 bunch,  finely chopped
  •  green chillies - 2, slit lengthwise
  • Turmeric powder - 1/4 teaspoon
  • Pepper powder - 1/2 teaspoon
  • Grated coconut - 1/2 cup 
  • Eggs -  2, beaten well
 Preparation

1.Beat eggs well and set aside.

2.Heat oil in a frying pan. Add mustard ito it.when it splutters add chopped spring onion,green chilli,curry leaves.
 
3.Add turmeric powder and pepper powder. Stir on a low heat for 2- 3 minutes.
 
4.Add grated coconut.Stir well on a low heat for 2 minutes.
 
5.Add beaten eggs, salt to taste and mix well. Cover with a lid and cook on a low heat for 5 minutes until done / egg well cooked / blended with all the ingredients. Sprinkle extra pepper powder if required. Open the lid and stir continuously for another 5 minutes.
