Capsicum Stir Fry / Mezhukkuperatty

It is a simple side dish you can have it with rice or chapathi.

Ingredients
  • Capsicum (Sliced) - 3(any colour)
  • Turmeric powder - ¼ tsp 
  • Crushed Chilly - ½ tsp
  • Curry leaves 
  • Salt 
Preparation

1.Heat oil in a pan.

2.Add capsicum, crushed chilly, turmeric powder, curry leaves and salt.

3.Fry until it turns to light golden colour.

Winged Beans Stir Fry

Winged bean is also known as Goa bean. It is nutrient rich and all parts of the plant are edible.

Ingredients

  • Winged Beans - 1/2 cup
  • Onion - 1
  • Turmeric Powder - 1/4 tsp
  • Green chilly - 2
  • Red chilly flakes - 1/4 tsp
  • Curry Leaves -  1 sprig
Preparation

1. Heat oil in a pan, add onion,green chilly, curry leaves and saute well.

2. When onion turns brown add beans,turmeric powder and salt. Mix well.

3. When it is half cooked add red chilly flakes.

4.When the beans become soft switch off the flame.

Broccoli Carrot Stir Fry

Ingredients
  • Sliced Carrot (length wise) - 1
  • Sliced Broccoli - 1 cup
  • Sliced Onion - 1
  • Turmeric powder - ¼ tsp
  • Crushed Chilly - ½ tsp
  • Mustard seeds - 1  tsp
  • Red chilly - 2
Preparation

1.Put carrot, broccoli and onion into a pan.

2.Add turmeric powder, salt and little water into it and mix well. Cover the pan with a lid and cook.

3.Heat oil in a pan. Add mustard seeds, curry leaves and red chillies into it, allow to Splutter.

4.Add cooked vegetable, crushed chilly and mix well.Fry untill it becomes golden colour.

Chena Mezhukkupuratti / Elephant Yam Stir Fry

Ingredients
  • Chena/Elephant Yam (peeled and cubed) - 2 cups
  • Turmeric powder -1/4 tsp
  • Chili powder -1/2 tsp + 1/2 tsp
  • Mustard seeds -1/4 tsp
  • Curry leaves - 1 sprig
  • Red Chilly - 1
  • Garlic crushed - 3 cloves
  • Shallots (sliced) -1/2 cup
  • Pepper powder -1/2 tsp
Preparation

1.Thoroughly rinse the cubed chena/yam.

2.Add turmeric powder,1/2 tsp chili powder, salt and water to it and cook until done. Do not over cook. Drain well and keep aside.

3.Heat oil in a non stick pan ,add mustard seeds and let it splutter. Add curry leaves, garlic, red chilly  and shallots and saute until it turns translucent.

4.Now reduce the flame to low and add 1/2 tsp chili powder, pepper powder. Saute for a few seconds.

5.Now add the cooked yam and saute for a few minutes or until it is browned.

Long beans stir fry / Payar Mezhukkuperatty


Ingredients
  • Long Beans - 250 gm
  • Onion- 1
  • Green chilly - 3
  • Turmeric powder - 1/4 tsp
  • Curry leaves
  • Coconut oil
  • Salt
Preparation

1.Wash and remove top and tail of the beans. Cut them length wise.
 
2.In a thick bottomed pan add long beans, salt, green chilies, turmeric powder and little water .Cover and cook it on low fame.
 
3.Heat oil in another pan and saute the chopped onion. Add curry leaves. Add the cooked long beans and stir it for a couple of minutes.

Ivy Gourd fry/ Kovakka Mezhukkuperatti

Ingredients 
  • Tindora - 1/4 kg
  • Turmeric - 1/4 tsp
  • Green chilli - 3
  • Onion - 1
Preparation

1.Heat oil in pan, splutter mustard. Add onion, curry leaf and green chilli.


2.Add chopped Tindora. Add turmeric and salt.


3.Cook in low flame till it gets fried well.


Fried Ivy gourd

Here i will share one more recipe of fried Ivy gourd.

Clean and cut the 250gm Ivy gourd into length-wise pieces. Marinate it with salt, 2 tsp pepper and 1/4 tsp of turmeric powder for 15 minutes. Deep fry it in oil. 

Beetroot Fry

 
Beetroot - 2
Onion - 1
Green chilli - 2
Red chilli powder - 1/2 tsp
Turmeric powder - 1/4 tsp


1.Heat oil in a pan. Saute Onion,green chilli and curry leaves.
2.When onion is transculent, add chopped beetroot.
3.Add red chilli powder,turmeric powder and salt
4.Stir in between and fry till it is done.

Brinjal Sir Fry

Ingredients 
  • Brinjal - 4(cut lengthwise)
  • Onion - 1
  • Red chilly - 3
  • Garlic - 6 flakes
  • Turmeric - 1/4 tsp
  • Red chilli powder - 1 tsp
Preparation

1.Heat oil in a pan. Saute onion,curryleaf and red chilly.


2.Add turmeric powder,garlic and salt.


3.Add brinjal and red chilli powder.


4.Fry it till done.

Capsicum Potato Fry

Ingredients
  • Potatoes diced- 2
  • Capsicum diced- 1
  • Chopped onion- 1
  • Ginger paste- 1/2 teaspoon
  • Coriander powder- 1/2 tablespoon
  • Chilli powder- 1 teaspoon
  • Turmeric powder- 1/4 teaspoon
  • Garam Masala powder- 1/2 teaspoon
  • Salt to taste
  • Oil- 1 tablespoon
Preparation

1.Heat oil in a pan. saute the onions till they turn light brown. 


2.Add the ginger paste and stir for a few second. 


3.Add the coriander powder, chilli powder and turmeric powder and stir for 30 seconds. 


4.Add the diced potatoes and capsicum and mix well. Add salt. Cover and cook on low heat till the vegetables are done. 


5.Sprinkle the garam masala powder and mix well. Garnish and serve hot with Rice or Roti.

Ladies finger/Bhindi Fry


Ingredients

  • Bhindi (ladies finger) -  1/4 kg
  • Onion - 1 big
  • Garlic - 7 pods
  • Chilly pdr -  2 Tsp
  • Turmeric pdr  - 1/2 Tsp
  • Coriander pdr  - 1/2 Tsp
  • Garam masala  - 1/2 Tsp
Preparation

1.Clean and cut the bhindi into thin pieces.

2.Heat oil in a pan and add mustard seeds. When it splutters, add curry leaves, sliced onion and garlic. Saute till it turns goldren brown and add bhindi. Stir it for few minutes.

3.Add the turmeric, chilly, coriander and garam masala pdr into it and combine well.

4.Reduce the heat. Stir it occassionally till it turns dry and crispy. Finally add the required amount of salt. Remove it from fire.                           

Koorka Mezhukkuperatti / Chinese Potato Fry

Ingredients
  • Chinese potato - 1 cup
  • Shallots - 1/2 cup, sliced
  • Turmeric powder - 1/4 tsp
  • Red chilli flakes- 2 tsp
Preparation

1. Heat oil in a pan and add mustard seeds. Once they crackle, add the sliced shallots, curry leaf and fry till they are red.

2. Add the koorka, turmeric powder and salt. Stir well and cover and cook till koorka becomes soft.

3. Once the koorka is 3/4 cooked, add red chilli flakes and little more oil and fry them in low flame, stirring them occasionally till they are slightly brown.

Potato Garlic Chips / Potato Mezhukkuperatty

Ingredients

  • Potato - 500 gm
  • Garlic - 15 flakes
  • Red Chillies - 4
  • Mustard seeds - 2 tsp
  • Turmeric Powder - 1/2 tsp

Preparation

1.Peel Potatoes and cut into small cubes. Skin Garlic flakes and chop finely.


2.Place a pan on fire and pour in coconut oil. Splutter mustard seeds, add red chillies cut into pieces.


3.Lower fire. Add garlic and curry leaves. Saute for 1-2 minutes.
4.When nice aroma of fried garlic appears (color of garlic shall not change) add turmeric powder. Mix well. Then add potato cubes and salt. Do not add water.
5.Mix together all ingredients well. Close the kadai with a lid. Cook in low fire for 10 minutes.
Potato Garlic chips is ready. It is a very simple but very tasty accompaniment with rice.
