Plantain Puttu / Ethapazham Puttu

Ingredients
  • Rice flour - 2 cups
  • Ripe plantain - 1, chopped
  • Sugar - 1tsp
  • Coconut - 1/2 cup
  • Salt
Preparation

1.In a bowl, mix rice flour and salt, then add water little by little and make it wet and mix well with hand without any lumps. Sprinkle some sugar on the banana pieces.

2.Boil water in a cooker with lid & without weight. In the mold/puttu maker,add a tbsp of grated coconut followed by plantain slices and then top with the moistened rice flour.Again top it with a second layer of plantain slices and grated coconut,cover with lid.

3.Place on cooker and steam cook until the steam comes out of the tiny holes on top of the lid for 5 minutes.Remove from cooker and invert on a plate and serve.

Banana / Pazham Bonda

Ingredients
  • Wheat flour- 1 cup
  • Sugar-1/2 cup
  • Ripe Banana- 3 medium size
  • Baking soda-1/2 tsp
  • Cardamom powder-1/2 tsp
  • Salt- a pinch
Preparation

1.Grind banana with sugar into a smooth paste.

2.Take a bowl with all other ingredients and add the ground banana.

3.Knead all the ingredients with little water to make soft thick dough. Keep it covered for 1/2 an hour.

4.Heat oil in a deep fryer. Take a spoonful of dough and fry until it become brown in color.

(or Wet palms with little water and make small balls and fry it in oil)

Kaipola / Plaintain Cake


It is one of the most authentic Malabar dishes. It is known to be made during Iftar parties. It is very easy to make with very few ingredients.

Ingredients
  • Ripe Plantain - 2
  • Egg - 2
  • Sugar - 2 tbsp.
  • Cardamom powder - 1/4 tsp
  • Cashew / Raisin - few
Preparation

1. Peel the plantain and cu into small pieces.

2. Put eggs, sugar and cardamom powder in a bowl and whisk them well.

3. Heat ghee in a pan, fry the nuts and raisins and keep aside.

4. In the same pan add plantain pieces and saute well. Pour the egg mixture into this and add nuts and raisins evenly.

5. Cook it in a low flame for 15 minutes. Remove from flame and cut into pie shaped pieces.


 

Banana Coconut Fry / Pazham Varattiyathu

Ingredients
  • Ripe banana - 3
  • Grated coconut - 1/2 cup
  • Sugar - 1 tbsp
  • Ghee - 3 tbsp
  • Cardamom powder - a  pinch
  • Cashew nuts - 2 tbsp
  • Raisins - 1 tbsp
Preparation

1.Cut the bananas into small pieces.

2.Heat ghee in a pan then add raisins, cashew nuts,grated coconut and fry for 3 minutes.

3.Add banana pieces and cardamom powder into it and fry for 5 minutes.

Banana Rolls



Ingredients 
  •  Ripe banana - 2
  •  Sugar - 2 tbsp
  •  Cardamom - 3 or 4(powdered)
  •  Grated coconut - 1/2 cup
  •  Ghee
  •  Nuts
Preparation

 1.Slice the banana into 3 pieces lengthwise.

 2.Heat ghee in a pan and shallow fry both sides of banana slices and keep it aside.

 3.In the same pan add some ghee and saute coconut, nuts, cardamom and sugar.

 4.Roll the slices and fill the coconut mix and fix it with a tooth pick.

Banana Nutella Icecream

An easy Ice cream with just two ingredients

Ingredients
  • Banana(robusta) - 2
  • Nutella - 3 tbsp
Preparation

1.Peel and slice the bananas and freeze it in an airtight freezer safe box or in a ziplock.

2.Once completely frozen, take it out from freezer, grind it with nutella until creamy.

3.Transfer to an airtight freezer safe box and freeze it for 4 hours before scooping and serve.

Banana / Vazhakka Thoran

Ingredients 
  • Raw banana/ Green plantains - 4
  • Grated coconut - 1/2 cup
  • Crushed garlic - 3 cloves
  • Chopped green chiles - 2 nos
  • Shallots - 5
  • Turmeric powder - 1/4 tsp
  • Cumin seeds -- 1/2 tsp
Preparation 
1.Peel and chop the raw banana into small pieces. Cook it covered by adding a cup water and salt , till it is done.
2.Grind grated coconut, Turmeric powder, green chillies and crushed garlic and 3 shallots to a coarse paste.
3.Heat oil in a pan and add mustard seeds. When the pop up add cumin seeds and curry leaves and chopped shallots and fry it for a minute.
4.Add cooked raw plantains and combine it with the coconut mix. saute for 5 minutes, stirring occasionally.

Banana Pancake

Ingredients 
  • Egg - 1
  • Banana - 1
  • Wheat flour - 2 tbsp
  • Sugar - 1tbsp
Preparation

1.Mix all ingredients  in a mixer. 


2.Heat ghee in a pan and pour the batter. When bubbles starts coming, keep the upside down.


3.When it is done, eat with honey or jam

Stuffed Banana / Pazham Nirachathu

Ingredients
  • Ripe Plaintain - 3  
  • Grated coconut - 3tbsp
  • Sugar - 1tbsp
  • Cardamom powder - 2 pinch
  • Maida - 2 tbsp
  • Raisins/Cashew 
Preparation

1.In a pan heat ghee then add grated coconut saute for few minutes in a medium flame. Add sugar in to it,saute well. Then fry cashews and raisins in it.Add cardamom powder. Mix well and switch off the stove.

2.In a bowl add maida, salt and water.mix well and make a thick batter and keep aside.

3.Peel banana and make a shallow slit lengthwise, from one end to another,depth should be made until center.

4.Fill coconut filling in to the slit, push the stuff inside the banana as much as you can and cover the slit with maida batter.

5.Heat oil in a pan and place the banana with slit should be down.after few minutes turn all sides and fry till banana becomes golden color.


Kaayada / Unnakkaya


It is a sweet dessert made of plantain. It is originated from Malabar region of India, often eaten for Iftar and other festivals.
 
Ingredients 
  • Banana - 2
  • Coconut - 1/2 cup
  •  Raisnis - few
  • Cardamom Powder - 1/2 tsp
  • Sugar - 2 tbsp
Preparation

1.Steam banana and mash it well.

2.Heat a pan and add sugar. Add some water just to soak it . Stir well and it well turn to syrupy.

3.Add coconut, raisin and cardamom powder and mix it well. Remove it from fire.

4. Take a small ball amount from mashed banana and spread it in palm. Apply some ghee in hands, so it wont stick.

5.Take coconut mixture and place it in flattened banana. Wrap it to give a spindle shape.

6.Heat oil and fry the piece till golden brown.

Pazham Pori/Banana Fritters

Ingredients 
  • Banana - 2
  • Maida - 1/2 cup
  • Rice flour - 1tbsp
  • Sugar - 1 tsp
  • Salt - 1 pinch
  • Turmeric - 1 pinch
Preparation

1.Mix all the ingredients except banana with water to thick batter.

2.Cut banana into 4 pieces. Dip the sliced bananas in the batter.

3.Heat oil. Deep fry the bananas till golden brown. Drain excess oil and serve hot.

Banana Cutlet

Ingredients 
  • Ripe Plantain -  2 large 
  • Grated coconut – 1/2 cup 
  • Cardamom powder – 2 pinches
  • Sugar -  1 tsp (Optional)
  • Plain bread crumbs – 1/4  cup
  • Milk –  3 tbsp
  • Ghee – 2 tbsp 
Preparation

1. Steam cook the ripe bananas with skin on. Peel off the skin and mash well.

2. Add coconut,cardamom powder,sugar and mix well with your fingers. Roll into medium-sized balls and flatten like cutlets.

3. Dip in milk and then roll in bread crumbs.

4. Heat ghee in a pan. Shallow-fry the cutlets until golden on both sides.
